Breakfast pear muffins

Now I have a toddler I’m always on the look out for food ideas that are suitable for her, it’s so easy to get stuck in a rut and eat the same things all the time. These muffins are super quick, easy and aren’t filled with lots of nasty junk so perfect for little ones. Obviously you can substitute whatever you want to suit you, experiment with different fruit etc, and I’m more of a ‘throw-everything-in-and-see-what-happens’ kind of person so this is a very loose recipe.

  • 3 cups SR flour
  • 1/2 cup brown sugar
  • Cinnamon
  • 1 1/2 cups usual milk
  • 1 tbsp coconut oil
  • 3 tsp agave nectar (or you could use vanilla extract)
  • A large pear

  • Mix all of the dry ingredients together then add the wet. Stir until combined. It goes into an elastic-like dough.
  • Either pour into cake cases or a lined loaf tin.
  • Bake for about 20-25 minutes then let cool.

These were even a hit with Mr Knight!
